Last week, I bought a huge bushel of kale, so on my venture to become my best, fit-self, I decided to try the new cool, hip thing and make the all-holy KALE CHIPS!

Definitely a conversation topic! Feeding them to my two roommates, one was in love after masking them with various spice mixes, while the other tentatively gnawed on my wispy kale disgrace. You should have seen his face. He wouldn’t had enjoyed them even if he was a cow. He definitely will not be buying into it any time soon.

Discovery: These kale chips were a step up from lawn clippings… Even with cheese powder! Unless you’re a farm animal, you can do better with your kale.


Kale is so nutritional, so don’t waste it by just baking them.

1. Portuguese Kale Soup

Hello winter! It’s cold out. Order me up a bowl of this!

My father’s side is Azorean Portuguese, so I grew up eating this sopa. He called it “soupish” and we didn’t have a written recipe for it. Like many family recipes, they are well known by memory and taste. There are variations of this recipe, but essentially the ingredients include kale, beans, potatoes, tomatoes, onions, and sausage.

2. Miso Kale Bowl

These kale bowls are popping up everywhere. They are delicious from SweetGreen and B.Good, but its always cheaper to make them from home. Instead of eating a standard salad, try a kale bowl. Add quinoa, if you’re into that or maybe a little Sriracha! 😉

3. Kale Quinoa Patties

So Good! My brother is not a health freak, so quinoa is not something he would buy or know how to use. He loved these! If you are new to both, definitely try out this recipe. Just make sure they add plenty of garlic and that they are well seasoned! They go perfect with aioli and topped with fried egg! Yum!
